The rollers are made of aluminum, providing smooth and consistent dough processing.
Which flour works best for homemade pasta dough?
For authentic Italian-style pasta, we recommend using durum wheat flour type 00.
Alternatively, mix all-purpose flour (type 405 or 550) with semolina in a 1:1 ratio for perfect elasticity and bite.
You can also use whole wheat flour, though you may need to add a bit more water.
If you prefer gluten-free pasta, you can experiment with potato flour, rice flour, or buckwheat flour.

Which pasta types can I make with Nonna?
Your Nonna comes with a pasta roller and interchangeable cutting attachments, allowing you to make:
- Lasagna sheets
- Spaghetti
- Tagliatelle / Fettuccine
Tip: Thin lasagna sheets can also be used to make homemade ravioli or tortellini.
How thick are Nonna’s pasta cuts?
- Tagliatelle: approx. 6 mm wide
- Spaghetti: approx. 2 mm thick
You can easily adjust the dough thickness for your preferred texture — from thin spaghetti to wide, rustic pasta ribbons.
How long does homemade pasta last, and how should I store it?
- Fresh pasta: keeps for about 3 days in the refrigerator.
- Egg-free pasta: can be fully dried and stored airtight, away from light for up to 1 year.
- Egg-based pasta: should be frozen and thawed completely before cooking.
How do I clean my Nonna properly?
Let any remaining dough dry completely first. Then simply tap or brush it off using the included cleaning brush.
For stubborn residues, wipe gently with a slightly damp cloth and dry thoroughly afterward.
Please note:
- Do not use dish soap or cleaning agents.
- Do not rinse under water.
- Before the next use, roll a small piece of dough through the machine to remove any old residues (discard this piece afterward).
Always make sure Nonna is completely dry before storing.
How can I prevent my noodles from sticking when cooking?
Allow your freshly made pasta to dry for about 10–15 minutes before cooking it in boiling salted water (without oil).
This helps prevent sticking and gives your pasta the perfect texture.
Nonna includes a practical pasta drying rack — hang your noodles loosely so they don’t touch, and let them air-dry briefly.
Exception: Filled pasta such as ravioli or tortellini should be cooked immediately.
